ONCO Fermentations (ONCO), in Tully, NY (20 min south of Syracuse), will celebrate their 7th anniversary March 11-15, 2026, with the release of three new "band beers". The release dates will coincide with performances by each of the bands at ONCO.

SYRACUSE, N.Y. - Nyenta -- ONCO Fermentations (ONCO) will celebrate their 7th anniversary week (March 11-15, 2026), with the release of three new "band beers", playing homage to three of their favorite bands. The release dates will coincide with performances by each of the bands at ONCO:

Friday, March 13: The Jess Novak Band will celebrate the release of "JNBerries", a 4.7% fruited sour with strawberries, dragonfruit, and vanilla. ONCO'S sours are copitch, or mixed fermentation sours, not kettle sours as typically seen at many breweries, lending to a well balanced multi-dimensional tasting experience.

JNBerries will be available on draft starting at 4pm March 13 and the Jess Novak Band performs from 7-9pm. Cans of JNBerries will be for sale starting March 13.

Saturday, March 14: Los Blancos will celebrate the release of "Los Blancos Lager", an American lager-style beer. While this beer is brewed without corn to let the malts shine, there may be corn present from the repatching of ONCO's house lager yeast for a refreshing 4.5% every day crisp refresher.

Los Blancos Lager will be available on draft starting at 1pm March 14 and Los Blancos performs from 6-8pm. Cans will also be available for purchase starting on March 14.

Sunday, March 15: The Shylocks will celebrate the release of "Shyhops", a 6.5% hazy IPA hopped with Citra and Motueka. This beer is intended to be a bolder version of our award winning session hazy IPA, Hyphen.

Shyhops will be available on draft starting at 1pm on March 15 and cans will be available starting March 15 for purchase to go. The Shylocks will perform from 3-5pm as part of ONCO's Sunday Blues Series.

Open since 2019, ONCO Fermentations is located at 397 NY Rt 281, Suite O, Tully, NY 13159. The family-friendly taproom serves their own award-winning house-brewed beer, "not beer", and food, centered on creative Neapolitan pizzas with "wood fired personality". Their hours of operation are Wednesdays 5-8pm, Thursdays & Fridays 4-9pm. Saturdays 1-9pm, and Sundays 1-6pm. They do live music generally every other Friday, most Saturdays, and are in year two of their Sunday Blues Series!

Other "band beers" brewed by ONCO have included "Polka Pils" (for Fritz's Polka Band), Inspire (for Jess Novak's Fire Festival), and Alterior Composition, for Just Joe. The brewery has also brewed numerous "beers for cause" since 2020, bringing attention to various organiztions and causes.
